Rosemont Market has a new chef.

Bryan Dame, a native of New England, has taken over the Rosemont kitchen from chef Brad Messier, who left the business to work on some personal projects. The departure was amicable, according to a spokesman for Rosemont Market.

Dame has treasured New England foodways since he helped in his grandparents’ garden and kitchen as a child. He began his culinary career as a dishwasher when he was 12. As a professional chef, he has worked in kitchens up and down the East Coast, including The Inn at Little Washington in Virgina; Opus 251 in Philadelphia; Norwich Inn in Vermont; The Edge Restaurant in Lincolnville; Tides Beach Club in Kennebunkport; Gather in Yarmouth; and most recently The Well at Jordan’s Farm, in Cape Elizabeth.

Dame will debut his food at a special event at Rosemont on Saturday, “Truly Tiny Bubbles.” A celebration of small-scale grower Champagne, the event will feature representatives from two French Champagne houses: Veronique Dumont of R. Dumont et Fils in the Aube, and David Bourdaire of Bourdaire-Gallois in the Massif Saint Thierry. Dame will prepare a variety of small plates to pair with the wines.

The event will be held from 7 to 9 p.m. at the Rosemont Bakery, at 559 Brighton Ave. in Portland. Tickets cost $65 each and are available through brownpapertickets.com.
