If you’re looking for a quick-and-easy meal after a long day at work but also want to keep it healthy, pick up a copy of Eating Well’s “One-Pot Meals: Easy, Healthy Recipes for 100+ Delicious Dinners” (Countryman Press, $24.95) by Jessie Price and the Eating Well test kitchen.
Price takes a broad view of one-pot cooking, including recipes that can be made in a wok, skillet, roasting pan, casserole, slow cooker, Dutch oven — even a salad bowl. Many of the recipes take less than 30 minutes start to finish, and some were developed with the help of well-known chefs and cookbook authors such as Deborah Madison.
Lest you think fast and healthy equals boring, how about a Saucy Coconut-Chicken Stir-Fry in the wok, or a Quick Coq au Vin prepared in the skillet in under an hour? Try a Greek Chicken and Vegetable Ragout in the slow cooker, or a Jamaican Curried Shrimp & Mango Soup in your Dutch oven.
